Executive Chef Anthony Lucido manages all aspects of the culinary and stewarding operations at The Westin San Diego including purchasing, inventories, scheduling, and banquet production and specializes in personalized menu design for the many high profile events held each year at the hotel.
The Chef likes to walk to his own beat, rarely repeating menus he has created for past events. He likes to use a "tapas", small plates format that allows for mini entrees so that the diners experience many individual culinary tastes. In doing so, he creates meals which appeals to the individual's taste instead of the masses.
Most chefs that are famous aren't famous because of their food; it is just their name and keeping up with the current trends. Lucido tries to move away from the bandwagon and following a certain trend, instead looking to work towards the artisan style of ingredients, letting each item represent itself and protecting the integrity and flavor of each item.
